Lemon Burst Cookies
I love all things lemon - lemon meringue pie, lemon cupcakes with lemon curd filling, lemon pudding, sour lemon candy, etc. So when I saw a pin for Lemon Burst Cookies on Pinterest, I knew that I had to make it. The cookie itself is soft - almost the cake part of a whoopie pie. One bite into these and it'll brighten your day!
INGREDIENTS:
1 Box of Lemon Cake Mix
1 Egg
1 8 oz. container of Cool Whip
Confectioner's Sugar
Zest from 1 Lemon
2 tbs. of Lemon Juice
DIRECTIONS:
Preheat oven to 350 degrees. In a medium bowl, combine lemon cake mix, egg, cool whip, lemon juice, and lemon zest. Beat until combined. The dough will be very sticky. Take a tablespoon full of dough and drop into a bowl of confectioner's sugar. Roll the dough so it's fully coated, roll into a ball and place onto a parchment paper lined baking pan. Bake for 10 to 12 minutes.
